EASY VEGAN CHIA SEED PANCAKES ⓥ

Easy vegan chia seed pancakes
Recently Joe has been making me these delicious vegan chia seed pancakes for breakfast (I'm a lucky gal) and so I thought I'd share the recipe with you, just in time for Pancake Day! I've tried some terrible vegan pancakes in the past, but this recipe has 100% restored my love for pancakes. They're delicious and super easy to make!

 WHY CHIA SEEDS? 

easy vegan chia seed pancakes health benefitsChia seeds are the perfect substitute for eggs in this recipe, binding the ingredients together in a non-sticky way! They also contain a whole host of beneficial vitamins and minerals. Good for the body, good for the pancakes - what's not to love?

 INGREDIENTS LIST 

I forgot to photograph the apple cider vinegar, which although isn't essential to this recipe, makes a great difference in terms of taste! So if you have some to hand, add in 1tsp during Step 2. Also, self raising flour is your best bet to make this recipe quicker, but if you only have all purpose flour then add 1tbsp of baking powder and a little more salt to make your pancakes light and fluffy!

 CORE INGREDIENTS 

3tbsp Chia Seeds 
200g Flour 
1tbsp Cinnamon Powder 
1pinch Sea Salt 
350ml Plant-Based Milk

STEP 1 Combine the chia seeds, flour, cinnamon and salt together in a bowl.

STEP 2 Add in the plant-based milk (almond is my personal favourite), the vanilla extract and the apple cider vinegar (if you choose to include it). Stir all the ingredients together to form a nice batter.

Step 3 Let the mixture stand for 5-10 minutes. This allows the chia seeds to absorb the liquid, creating a thicker, fluffier mixture.

Step 4  In a pre-heated pan, add dollops of mixture to create the pancake sizes you want. We like to have little, stackable American-style pancakes so we can usually fit 2 at a time in the pan, but bigger ones work well too!

Step 5  Cook on one side until lots of little holes begin to appear in the surface and then flip it and cook the other side! We usually know when it's time to flip them as they begin to resemble a crumpet, but around 1-2 minutes per side is usually enough!



TOPPING SUGGESTIONS 

Blueberries, Pumpkin Seeds, Raspberries, Choc Shot, Banana, Maple Syrup, Lemon Zest, Golden Syrup...

If you're like me and like to add as many toppings as possible to a pancake, then chuck on whatever you fancy! I like lots of syrup and lots of fruit to satisfy my sweet tooth, but Joe is a bit more reserved and prefers to keep the pancakes a bit more savoury!!
